Can you share a screenshot of what you're seeing or clarify what you mean by “displaying my recipe photos in the center”?

It looks to be working correctly? That is how the Header Carousel appears.

Is there way to make the image show the square version of the photo I remember it used to show my images correctly. If you look at the stir fried garlic chili udon photo it isn't showing this centered. It seems to be cutting off half the bowl.

Grow uses your og:image metadata to pull the image for each post bookmark. Usually this metadata is supplied by your social sharing or SEO plugin; the settings are typically related to Facebook shares or social media images.

You can see which image is assigned as a post's og:image by viewing the page source and searching for the og:image tag. This should also tell you which plugin supplies the OpenGraph meta tags so you can determine which settings need to be adjusted.

If you decide to make any changes, you'll need to refresh your posts in Grow for them to take effect. To do this, you'll want to clear your site's cache and any caching plugins and then go to Grow Publisher Portal > Grow Settings > Recommended Content and click the Refresh Posts button. The refresh process can take up to 24 hours.

I checked my page source and I'm using images sized 1200 by 1800 but I haven't changed anything and they used to display centered could there be anything else causing this? I'm also not using Yoast SEO for any social settings or using a social sharing or seo plugin that I'm aware of.

It's possible Grow pulled a cached image instead of your current og:images. Clearing your site's caches and refreshing posts could still help.

There are no adjustments that can be made to Grow's smart cropping of images. It will do its best to keep the image's integrity while serving it in a 1:1 format, but the only way to ensure the entirety of the image is served is to use a 1:1 aspect ratio.
